It's still peach season somewhere...
right?
Just not here. We are deep into apple and pumpkin season here. Unfortunately for Super Dad, he has not had a chance to use apple-picking as an excuse to climb a tree this year. We've either been busy every weekend or it has been raining, and I mean buckets! Such is life in the Northeast.
I know I promised you a Peach Cobbler recipe, oh,nearly sixty days ago. You can only imagine how terrible I feel at being so late! I'm sure all will be forgiven once you taste it.
Without further ado, here is the recipe. It is based on this one from Allrecipes.
Peach Cobbler
- 6 fresh peaches - peeled, pitted and sliced
- 1 1/2 teaspoons ground cinnamon
- 1 cup white sugar
- pinch of nutmeg
- 1/2 cup shortening (or unsalted butter if you prefer)
- 3/4 cup white sugar
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla
- 1 cup boiling water
- 4 tablespoons butter
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C). Grease a 10x10 inch baking dish. (I used a 12x9 pyrex dish and it worked fine.)
- Stir together peaches with cinnamon, nutmeg and 1 cup sugar. Set aside.

In a medium bowl, cream together shortening and 3/4 cup sugar. Mix in
flour, baking powder and salt alternately with milk. Add vanilla and mix. Pour into prepared
pan.
- Top with peach mixture.
- Drop butter in boiling water and stir until melted. Pour all over peaches.
- Bake in preheated oven for 1 hr, or until golden brown. (It took mine 1 hr and 10 minutes.)
